Research Overview
Ellen Shanley joined the Department of Allied Health Sciences at the University of Connecticut in 2008 as the Director of the Coordinated Program in Dietetics and the Dietetic Internship in Allied Health Sciences. She is a registered dietitian. Professor Shanley has been at the University of Connecticut since 1985 and was the Didactic Program Director for Dietetics. She is presently working on a USDA funded food safety education grant. Her area of specialization is food service management and nutrition education. She has a great deal of passion about the profession of dietetics and has held numerous positions in the Connecticut Dietetic Association as well as at the national level of the American Dietetic Association.
